Yes, we’re back in action from Wednesday night and to get you all excited about our return we’re featuring one of our fave specials…napoli, provolone, white anchovies, capers, basil, kalamata olives and for the brave, a little bit of chilli…it’s a bit spicy but not too much…

Jules has made a fresh batch of homemade tiramisu which is light, decadent and the perfect way to finish a delightful dinner at Bella. Otherwise we always have gelato, baci and/or tartufo to keep your cravings satiated.

Special Jan 25-28

This week’s special is the much sought after ‘beetroot pizza’…extra virgin olive oil base, provolone, baby beets, feta, walnuts and fresh rocket. Perfect for the vegetarians in our midst although if you crave protein then chicken is the best option here.
As it’s our last week before our annual holiday, this week will be your last opportunity to indulge in some of Jules’ homemade tiramisu for a few weeks…enjoy it with an espresso or a hot chocolate!
Our trading hours this week will be a departure from our usual…we will be closed on Thursday for the Australia Day public holiday so we’ll be open on Wednesday and Friday from 5pm and Saturday from 3pm.
After our Saturday service we’ll be taking a few weeks of rest and relaxation to recharge our batteries and will return refreshed for our beautiful autumn season! Hope we’ll see you!IMG_2349

Special May 25-28

This week’s special is the ‘quattro formaggi’ or four cheeses…but with a Bella twist. Napoli, provolone, mozzarella, feta and French brie with fresh basil. It sounds so simple but it’s packed full of punch and each mouthful offers something different! Yum!

Dessert lovers will be pleased to hear that Jules’ traditional tiramisu returns to the menu this week…made with amore!

What is fior di latte?

In the ten months that we’ve been making delicious woodfired pizzas in Castlemaine, when I’m serving customers the MOST asked question I receive is, ‘what is fior di latte?’.

For those of us who have a solid appreciation of what distinguishes a great pizza from a good pizza – fior di latte is nothing new. The direct translation is ‘flower of milk’. But there are many who have been raised to think that pizza is a bread-like base with a gazillion toppings and shredded cheese oily enough to dissolve any decent pizza box. That’s not pizza – that’s junkfood that will leave you feeling heavy, fatty and likely affect your mood too – check out your local ‘pizza’ chain store for this variety.

Real pizza made using authentic cooking techniques that have been used for generations is not like that. Pare it back; quality ingredients and enough time will create a light dough that when topped with a few tasty ingredients will ensure that you can actually taste the pizza and feel satisfied, but not bloated.

So back to fior di latte.

It’s cheese – the real mozzarella. Those is the food game will be familar with mozzarella di bufala (buffalo mozzarella) and the one we use is pretty much the same except it’s cow’s milk (much easier to source in Australian country towns). When we’re not using fior di latte we’re using asiago another beautiful cheese perfect on pizza…we do source that one from Italy, but I’ll talk more about that next time…
