Special March 29-April 1

This week’s special is on a garlic base, with provolone, zucchini, halloumi (cheese) and salami which you can order either hot or mild…it’s delicious and is bound to warm you up as this week’s nights begin to cool down into true autumn weather. If you’re vegetarian, you can always swap the salami for mushrooms!

Homemade tiramisu is available as always – made with amore it’s bound to delight!

This week’s special of deliciousness is on an extra virgin olive oil base with provolone, baby spinach, roasted capsicum, pork salsicce (sausage) and feta…mmm mmmm! Yummo! For the vegetarians amongst us this one’s just as delicious without the pork salsicce…

On the dessert front we have our yummy decadent chocolate mud cake which is the perfect way to finish dinner..especially so with an espresso at hand!

As winter settles in we feature our hearty specials that will warm the cockles of your soul…this week it’s a delicious combo that’s bound to impress!

Special Oct 22-25

It’s a special for the vegetarians this week; garlic base, provolone, asparagus, feta, roasted capsicum, and split green marinated olives. Looks amazing in red, white and green and is so delicious.

It’s a great pizza with any one of our selection of salads made to order – the mista (mixed greens), the greek (cucumber, tomato, olives, feta), the rucola (rocket, pear, parmesan) and the summery caprese (tomato, fior di latte, basil) – the perfect accompaniment.

Our dessert special is the decadent chocolate mud cake served ‘ala european’ with vanilla ice cream and fresh strawberry…yum!

What is fior di latte?

In the ten months that we’ve been making delicious woodfired pizzas in Castlemaine, when I’m serving customers the MOST asked question I receive is, ‘what is fior di latte?’.

For those of us who have a solid appreciation of what distinguishes a great pizza from a good pizza – fior di latte is nothing new. The direct translation is ‘flower of milk’. But there are many who have been raised to think that pizza is a bread-like base with a gazillion toppings and shredded cheese oily enough to dissolve any decent pizza box. That’s not pizza – that’s junkfood that will leave you feeling heavy, fatty and likely affect your mood too – check out your local ‘pizza’ chain store for this variety.

Real pizza made using authentic cooking techniques that have been used for generations is not like that. Pare it back; quality ingredients and enough time will create a light dough that when topped with a few tasty ingredients will ensure that you can actually taste the pizza and feel satisfied, but not bloated.

So back to fior di latte.

It’s cheese – the real mozzarella. Those is the food game will be familar with mozzarella di bufala (buffalo mozzarella) and the one we use is pretty much the same except it’s cow’s milk (much easier to source in Australian country towns). When we’re not using fior di latte we’re using asiago another beautiful cheese perfect on pizza…we do source that one from Italy, but I’ll talk more about that next time…
